An eighth beef ranges from 50-75lbs (hanging weight) and consists of premium steaks, roasts, brisket, beef tips, and ground beef for $4.99 per pound. Your choice of the hind quarter or front quarter available. 2 weeks lead time is necessary to allow for aging of the meat. The $25 deposit will be applied toward the total price of your beef. Custom delivery options available. Please note that you will pay for the hanging weight. The amount of meat you will receive depends, of course, on the size of the animal, and thus can't be specifically designated beforehand. This sweet mint family herb smells like black licorice and in fact has some chemicals in common with licorice, but the scent also has notes of lemon, pine, sage, black pepper, and camphor, so it's nice and complex. The leaves or flowers are edible and can be used to sweeten tea or flavor sugar or quickbreads and muffins (add 1/2 cup chopped fresh flowers). Add the leaves to fruit salads or steep them in milk for flavoring when making ice cream. The Native Americans found many uses for this North American plant. The Cheyenne drank a tea of this herb to relieve a "dispirited heart." The Cree included the flowers of this magic herb in medicine bundles, and the Chippewa made a protective charm of it. This arugula is picked when it is young and always grown in our greenhouses so that is very tender. It has a nutty, spicy flavor that is great as a salad. Also great used in a pesto sauce instead of basil. Our products are all harvested fresh to order, and grown just a few miles away, in greenhouses and outdoors. You may purchase a pasture raised beef and have it processed to your liking. I will deliver the animal to the local processing plant of your choice (either Lou's Meat Market or Ferguson's Packing). You will be responsible for the processing fee but delivery there will be free. As an animal owner you may have a custom processor do the processing for you the way you would like for it to be done. This beef is pasture raised and grass fed until it reaches a size suitable for processing. If a person wishes a side the animal would be processed under U.S.D.A. inspection (which costs a little more) so I could have the other half processed for individual cut sales. Your cost will be based upon the hot rail weight of the half, times the price per pound. An estimate will be made as to the weight of the animal and you will be informed of that before the animal is taken to the processor.
